- 1/2 cup crushed cookies, nuts, or sprinkles (optional)
- 2 cups semisweet chocolate chips
- 2 tablespoons coconut oil
- Crushed nuts, sprinkles, or shredded coconut (optional toppings)
Instructions
- Line an 8×8-inch pan with parchment paper. Spread the softened vanilla ice cream evenly into the pan. If desired, mix in crushed cookies, nuts, or sprinkles. Freeze for at least 120 minutes or until firm.
- Remove the ice cream from the pan and cut it into bars or squares. Insert a wooden popsicle stick into each bar. Return to the freezer while preparing the chocolate coating.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring until smooth. Let cool slightly.
- Dip each ice cream bar into the melted chocolate, ensuring it’s fully coated. Quickly sprinkle with toppings before the chocolate hardens. Place on a parchment-lined tray and freeze for another 60 minutes.
- Once fully set, serve immediately or store in an airtight container in the freezer.
