  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (heat-treated for safety)
  • 1 cup mini chocolate chips
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • Chocolate syrup for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
  4. Stir in boiling water (the batter will be thin).
  5. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. For the cookie dough filling, beat butter, brown sugar, and granulated sugar until creamy.
  7. Add vanilla extract.
  8. Gradually mix in flour until combined, then stir in mini chocolate chips.
  9. For the frosting, beat the softened butter until creamy.
  10. Gradually add powdered sugar and mix until smooth.
  11. Add heavy cream and vanilla extract, and beat until light and fluffy.
  12. Place one cake layer on a serving plate. Spread half of the cookie dough filling on top.
  13. Add the second cake layer on top.
  14. Frost the top and sides of the cake with the buttercream frosting.
  15. Drizzle with chocolate syrup and sprinkle with extra chocolate chips or cookie dough pieces if desired.
  16. Cut a slice, serve, and enjoy this decadent treat!

Notes

Make sure to use heat-treated flour for safety and do not over-mix the batter for fluffy cake layers.
