Chocolate and Coffee Cake with Hazelnut Mousse

Description

A rich and delightful dessert combining coffee and chocolate flavors with creamy hazelnut mousse.


Ingredients

  • 4 eggs
  • 200 g sugar
  • 150 g flour
  • 50 g unsweetened cocoa powder
  • 1 tsp baking powder
  • 100 ml strong coffee (pre-brewed and chilled)
  • 100 ml vegetable oil
  • 1 tsp vanilla extract
  • 200 g hazelnuts (for mousse)
  • 250 ml heavy cream (for mousse)
  • 100 g dark chocolate (for mousse)
  • 2 tbsp sugar (for mousse)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Sift together flour, cocoa powder, and baking powder, then mix into the egg mixture.
  4. Stir in coffee, vegetable oil, and vanilla extract until just combined.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. For the mousse, melt dark chocolate and let it cool.
  7. Whip heavy cream with sugar until soft peaks form.
  8. Fold the cooled chocolate into the whipped cream along with chopped hazelnuts carefully until combined.
  9. Once the cake has cooled, spread the hazelnut mousse on top.
  10. Refrigerate for at least an hour before serving.

Notes

Serve cold and garnish with extra hazelnuts or chocolate sauce. Best consumed within three days.
