Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup strong brewed coffee, cooled
  • 3/4 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture in three parts, alternating with coffee and milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve plain, with whipped cream, or a drizzle of chocolate sauce. Store in an airtight container for up to 3 days or refrigerate for up to a week.
