Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • Pinch of nutmeg
  • 1 cup salted butter (softened)
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 3 medium bananas (mashed, about 1 cup)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chunks
  • 2/3 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, rolled oats, cinnamon, baking soda, salt, and nutmeg. Set aside.
  3. In a large bowl, cream together softened butter, brown sugar, and sugar for 2-3 minutes until light and fluffy.
  4. Mix in the mashed bananas, vanilla extract, and eggs until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in chocolate chunks and walnuts.
  7. Use an ice cream scoop to drop dough onto the prepared baking sheet, spacing them at least 2 inches apart.
  8. Bake for 10-12 minutes until browned around the edges.
  9. Allow to cool on the baking sheet for 3-4 minutes before transferring to a cooling rack.

Notes

Store cookies in an airtight container for up to 3 days or refrigerate for up to 1 week. Use ripe bananas for the best flavor.
