- 1 1/4 cup all-purpose flour
- 3/4 cup cake flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup mini M&Ms
- 3/4 cup chocolate chips
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or use a silicone mat.
- In a large bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt. Set aside.
- Using a stand mixer with a paddle attachment, cream the butter and sugars together until smooth. Add the egg, egg yolk, and vanilla extract and mix until combined.
- Gradually add the dry ingredients into the butter mixture, followed by the chocolate chips. Turn off the mixer.
- Gently fold in the mini M&Ms with a spatula.
- Form the dough into 6 large dough balls and place them on the baking sheet, spaced evenly apart.
- Bake for 10-12 minutes, or until the tops are golden brown.
- Let the cookies cool on the baking sheet for 15 minutes before transferring them to a cooling rack to cool completely.
Notes
For a thicker cookie, chill the dough for about 30 minutes before baking. Feel free to add nuts or different types of chocolate for variation.
