- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup mini chocolate chips
- 1 cup cookie dough (pre-made or homemade)
- Whipped cream
- Extra mini chocolate chips
- Chocolate ganache (optional)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter, then press into the bottom of the pan to form the crust. Bake for 10 minutes and set aside to cool.
- In a large bowl, beat the cream cheese, granulated sugar, and brown sugar until smooth and creamy.
- Add the vanilla extract and heavy cream, continuing to beat until fully combined and smooth.
- Gently fold in the mini chocolate chips and pieces of cookie dough.
- Pour the cheesecake filling over the cooled crust and smooth the top. Cover and chill in the fridge for at least 6 hours or overnight.
- Before serving, top with whipped cream, extra mini chocolate chips, and drizzle with chocolate ganache if desired.
Notes
For best results, chill the cheesecake for at least 6 hours to allow it to set. You can substitute gluten-free graham crackers if needed.
