- 24 chocolate-filled chocolate sandwich cookies
- 5 tablespoons melted salted butter
- 16 oz cream cheese (2 blocks), room temperature
- 1/2 cup sugar
- 1/2 cup sour cream, room temperature
- 1 tablespoon cornstarch
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- Fresh sweet cherry sauce
Instructions
- Preheat your oven to 325°F (165°C) and prepare an 8-inch square pan with foil and cooking spray.
- Crush the sandwich cookies into fine crumbs and mix with melted butter. Press this mixture into the bottom of the pan and bake for 8 minutes.
- In a bowl, beat the cream cheese until smooth, then add sugar, sour cream, cornstarch, vanilla, and eggs. Mix well. Carefully fold in the chocolate chips and pour this mixture over the cooled crust.
- Bake the cheesecake for 35-40 minutes. When done, turn off the oven, open the door, and let it cool for 1 hour.
- Chill in the refrigerator for at least 6 hours or overnight.
- Once chilled, top with cherry sauce and garnish with chocolate chips if desired.
- Serve cold or at room temperature.
Notes
For best results, ensure all ingredients are at room temperature before mixing. Store leftovers in an airtight container in the refrigerator for 3-4 days.
