- 24 chocolate-filled chocolate sandwich cookies
- 5 tablespoons melted salted butter
- 16 oz cream cheese (2 blocks), room temperature
- 1/2 cup sugar
- 1/2 cup sour cream, room temperature
- 1 tablespoon cornstarch
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- Fresh Sweet Cherry Sauce
Instructions
- Preheat your oven to 325°F (165°C) and prepare an 8-inch square pan with foil and cooking spray.
- Crush the sandwich cookies into fine crumbs and mix with melted butter. Press this mixture into the bottom of the pan and bake for 8 minutes.
- In a bowl, beat the cream cheese until smooth, then add sugar, sour cream, cornstarch, vanilla, and eggs. Mix well.
- Carefully fold in the chocolate chips and pour this mixture over the cooled crust.
- Bake the cheesecake for 35-40 minutes. When done, turn off the oven, open the door, and let it cool for 1 hour.
- Chill in the refrigerator for at least 6 hours or overnight.
- Once chilled, top with cherry sauce and garnish with chocolate chips if desired.
- Serve cold or at room temperature.
Notes
Make sure all ingredients are at room temperature for best blending. Don’t skip the chilling step to enhance the flavor.
