Ingredients

- 1/2 cup unsalted butter, melted (1 stick)
- 1 cup light brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt (optional)
- 3/4 to 1 cup semi-sweet chocolate chips
- 1 cup cherries, fresh or frozen
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-by-8-inch baking pan with aluminum foil and spray with cooking spray.
- Melt the butter in a medium microwave-safe bowl for about 60 seconds.
- Add the packed brown sugar to the melted butter and stir until well combined.
- Mix in the egg and vanilla extract, stirring until smooth.
- Add the flour and optional salt, stirring gently until just combined.
- Fold in the semi-sweet chocolate chips and cherries.
- Pour the batter into the prepared baking pan, smoothing the top.
- Bake for 27 to 32 minutes, until the edges are pulling away and the center is set.
- Allow to cool for at least 1 hour before slicing and serving.
Notes
Store leftovers in an airtight container at room temperature for up to 1 week; can be frozen for up to 3 months.
