- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour

- 2 cups semisweet chocolate chips
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cheesecake Filling: In a bowl, beat together the softened cream cheese, 1/4 cup sugar, and 1 teaspoon vanilla extract until smooth. Set aside.
- Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, 1 cup granulated sugar, and brown sugar until light and fluffy. Add the eggs and 2 teaspoons of vanilla extract, mixing well. Gradually add the flour, baking soda, and salt, mixing until just combined. Fold in the chocolate chips.
- Assemble the Cookies: Preheat the oven to 350°F (175°C). Scoop 1 tablespoon of cookie dough, flatten it slightly, and place a teaspoon of cheesecake filling in the center. Cover with another tablespoon of dough, sealing the edges to fully enclose the filling. Place each cookie on a baking sheet lined with parchment paper.
- Bake the Cookies: Bake for 12-15 minutes, until the edges are golden brown. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Best served warm. Can be stored in an airtight container at room temperature for 3-5 days or frozen for longer storage.
