Delightful cookies that combine the rich flavors of cheesecake and classic chocolate chip cookies.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar.
  3. Beat in the egg and vanilla until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients.
  5. Stir in the chocolate chips.
  6. In a separate bowl, mix the softened cream cheese with powdered sugar until smooth.
  7. To assemble the cookies, take a tablespoon of cookie dough, flatten it, and place a small dollop of the cream cheese mixture in the center. Encase the cream cheese by folding the dough around it and rolling it into a ball.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for thicker cookies or experiment with different types of chocolate chips.
