- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon corn starch
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 ripe bananas, peeled
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking soda, corn starch, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, ripe bananas, brown sugar, and granulated sugar until light and fluffy.
- Beat in the vanilla extract until well combined.
- Gradually stir in the flour mixture until just combined.
- Fold in the semi-sweet chocolate chips.
- Cover the dough and refrigerate it for 30 minutes to firm up.
- Preheat your oven to 375°F (190°C). Line two cookie sheets with parchment paper or lightly spray them with cooking spray.
- Use a cookie scoop to portion out the dough onto the prepared cookie sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 9-10 minutes, or until the cookies just start to turn light golden brown on top.
- Let the cookies cool completely on the cookie sheets before transferring them to a wire rack.
Notes
Use very ripe bananas for a sweeter flavor. Store leftovers in an airtight container for up to a week.
