Soft and chewy cookies that combine rich chocolate chips with the natural sweetness of ripe bananas.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon corn starch
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 ripe bananas, peeled
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, corn starch, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter, ripe bananas, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract until well combined.
  4. Gradually stir in the flour mixture until just combined.
  5. Fold in the semi-sweet chocolate chips.
  6. Cover the dough and refrigerate it for 30 minutes to firm up.
  7. Preheat your oven to 375°F (190°C). Line two cookie sheets with parchment paper or lightly spray them with cooking spray.
  8. Use a cookie scoop to portion out the dough onto the prepared cookie sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 9-10 minutes, or until the cookies just start to turn light golden brown on top.
  10. Let the cookies cool completely on the cookie sheets before transferring them to a wire rack.

Notes

Use very ripe bananas for a sweeter flavor. Store leftovers in an airtight container for up to a week.
