- 4 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry pie filling or fresh pitted cherries
- 2 tbsp cherry liqueur (optional)
- 1/2 cup chocolate shavings or curls
- Fresh cherries
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper. In a mixing bowl, beat eggs and sugar together with an electric mixer on high speed for about 5 minutes, until thick and pale. Gently fold in vanilla extract and sifted cocoa powder. Spread evenly in the prepared pan and bake for 10–12 minutes until it springs back when touched.
- Turn the warm cake onto a clean kitchen towel dusted with powdered sugar. Remove parchment paper and roll up the cake with the towel. Allow to cool completely.
- In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
- Unroll the cooled cake, spread whipped cream evenly, and scatter cherry pie filling or fresh cherries on top. Drizzle with cherry liqueur if desired. Roll the cake back up, seam-side down.
- Spread remaining whipped cream over the outside of the roll and decorate with chocolate shavings and fresh cherries.
- Chill in the refrigerator for at least 1 hour to set. Slice and serve.
Notes
For best results, use cold bowls and beaters when whipping the cream. Variations can include swapping cherries for strawberries or raspberries.
