Description

A delightful dessert combining rich chocolate and juicy cherries, perfect for gatherings or as an indulgent snack.


Ingredients

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling or fresh pitted cherries
  • 2 tbsp cherry liqueur (optional)
  • 1/2 cup chocolate shavings or curls
  • Fresh cherries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper. In a mixing bowl, beat eggs and sugar together with an electric mixer on high speed for about 5 minutes, until thick and pale. Gently fold in vanilla extract and sifted cocoa powder. Spread evenly in the prepared pan and bake for 10–12 minutes until it springs back when touched.
  2. Turn the warm cake onto a clean kitchen towel dusted with powdered sugar. Remove parchment paper and roll up the cake with the towel. Allow to cool completely.
  3. In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  4. Unroll the cooled cake, spread whipped cream evenly, and scatter cherry pie filling or fresh cherries on top. Drizzle with cherry liqueur if desired. Roll the cake back up, seam-side down.
  5. Spread remaining whipped cream over the outside of the roll and decorate with chocolate shavings and fresh cherries.
  6. Chill in the refrigerator for at least 1 hour to set. Slice and serve.

Notes

For best results, use cold bowls and beaters when whipping the cream. Variations can include swapping cherries for strawberries or raspberries.
