Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the eggs and sugar together until the mixture is fluffy and light.
- Gently fold the dry ingredients into the egg mixture until combined.
- Spread the batter evenly on the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, roll the warm cake in a clean kitchen towel and let it cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Unroll the cooled cake, spread cherry preserves on top, followed by a layer of whipped cream.
- Carefully roll the cake back up, starting from one end.
- Top the rolled cake with fresh cherries and chocolate curls for decoration.
- Chill the cake in the refrigerator before serving to enhance the flavors.
