Chocolate Cherry Dr Pepper Cake

Description

A delightful dessert that combines rich chocolate flavor with the sweetness of cherries and a fizzy twist from Dr Pepper.


Ingredients

  • 1 box chocolate cake mix
  • 1 cup Dr Pepper
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup maraschino cherries, chopped (reserve some for garnish)
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons Dr Pepper
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish
  • Additional maraschino cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, mix the chocolate cake mix, Dr Pepper, vegetable oil, and eggs on medium speed until well blended. Gently fold in the chopped maraschino cherries.
  3. Divide the batter evenly between the prepared cake pans and bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  5. In a mixing bowl, beat the softened butter until smooth. Gradually add the powdered sugar, one cup at a time, mixing on low speed until fully incorporated.
  6. Add 2-3 tablespoons of Dr Pepper and the vanilla extract, continuing to beat until the frosting is smooth and spreadable.
  7. Place one cake layer on a serving dish and spread a generous layer of frosting on top. Add the second cake layer and cover the top and sides with the remaining frosting.
  8. Garnish with chocolate shavings and reserved maraschino cherries. Enjoy!

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Serve at room temperature.
