- 300 grams cherries (pitted)
- 1/4 cup white sugar
- 200 grams chocolate biscuits
- 6 tablespoons (84 grams) butter, melted
- 2 x 250 gram blocks of cream cheese, room temperature
- 1 cup condensed milk
- 1 teaspoon vanilla extract
- Fresh cherries (for serving)
- Extra chocolate (optional, for garnish)
Instructions
- Make the Cherry Puree: Pit the cherries and place them in a small saucepan with the sugar. Cook over medium heat until the cherries are soft. Puree the mixture until smooth, then return to the saucepan and boil until thickened. Chill.
- Prepare the Biscuit Base: Crush chocolate biscuits and mix them with the melted butter. Press this mixture into a springform pan and chill for 30 minutes.
- Make the Cheesecake Filling: Mix the cream cheese until smooth, then add vanilla and condensed milk. Stir in 1/4 cup of the cherry puree.
- Assemble the Cheesecake: Pour half the filling over the chilled base and swirl in some cherry puree. Repeat with the remaining filling and cherry puree.
- Chill and Serve: Refrigerate for 24 hours. Serve garnished with fresh cherries and optional chocolate.
Notes
Ensure the cream cheese is at room temperature for a smooth filling. Adjust sugar in the cherry puree based on the sweetness of the cherries.
