Ingredients

  • 300 grams cherries (pitted)
  • 1/4 cup white sugar
  • 200 grams chocolate biscuits
  • 6 tablespoons (84 grams) butter, melted
  • 2 x 250 gram blocks of cream cheese, room temperature
  • 1 cup condensed milk
  • 1 teaspoon vanilla extract
  • Fresh cherries (for serving)
  • Extra chocolate (optional, for garnish)

Instructions

  1. Make the Cherry Puree: Pit the cherries and place them in a small saucepan with the sugar. Cook over medium heat until the cherries are soft. Puree the mixture until smooth, then return to the saucepan and boil until thickened. Chill.
  2. Prepare the Biscuit Base: Crush chocolate biscuits and mix them with the melted butter. Press this mixture into a springform pan and chill for 30 minutes.
  3. Make the Cheesecake Filling: Mix the cream cheese until smooth, then add vanilla and condensed milk. Stir in 1/4 cup of the cherry puree.
  4. Assemble the Cheesecake: Pour half the filling over the chilled base and swirl in some cherry puree. Repeat with the remaining filling and cherry puree.
  5. Chill and Serve: Refrigerate for 24 hours. Serve garnished with fresh cherries and optional chocolate.

Notes

Ensure the cream cheese is at room temperature for a smooth filling. Adjust sugar in the cherry puree based on the sweetness of the cherries.
