A delightful dessert combining rich chocolate and tart sour cherries, perfect for any occasion.
Ingredients

- 1 glass of sour cherries (approx. 350 g drained weight)
- 160 g soft butter
- 180 g sugar
- 1 pinch of salt
- 5 eggs (size M)
- 200 g all-purpose flour
- 30 g cocoa powder (approx. 4 tbsp)
- 2 tsp baking powder
- 70 g grated dark chocolate
- Some butter for the pan
Instructions
- Drain the sour cherries in a sieve.
- Preheat the oven to 180 degrees Celsius (160 degrees Celsius for fan).
- Grease a loaf pan (25 cm) and line it with a 22 cm wide strip of baking paper.
- Beat the soft butter, sugar, and salt until fluffy.
- Add the eggs one at a time while mixing at the highest speed.
- Mix together the flour, cocoa, and baking powder, then incorporate into the batter.
- Add the grated chocolate and drained sour cherries, folding them in with a spatula.
- Pour the batter into the prepared pan and smooth the top.
- Bake in the lower third of the oven for about 55-60 minutes or until a toothpick comes out clean.
- Let it cool completely on a wire rack.
- Loosen the cake from the pan with a knife and lift it out using the baking paper strip.
- Remove the paper and place on a platter; dust with powdered sugar before serving.
Notes
This cake keeps well wrapped at room temperature for at least 3 days. Pairs wonderfully with vanilla ice cream or whipped cream.
