Description

A delightful dessert combining rich chocolate and tart sour cherries, perfect for any occasion.


Ingredients

  • 1 glass of sour cherries (approx. 350 g drained weight)
  • 160 g soft butter
  • 180 g sugar
  • 1 pinch of salt
  • 5 eggs (size M)
  • 200 g all-purpose flour
  • 30 g cocoa powder (approx. 4 tbsp)
  • 2 tsp baking powder
  • 70 g grated dark chocolate
  • Some butter for the pan

Instructions

  1. Drain the sour cherries in a sieve.
  2. Preheat the oven to 180 degrees Celsius (160 degrees Celsius for fan).
  3. Grease a loaf pan (25 cm) and line it with a 22 cm wide strip of baking paper.
  4. Beat the soft butter, sugar, and salt until fluffy.
  5. Add the eggs one at a time while mixing at the highest speed.
  6. Mix together the flour, cocoa, and baking powder, then incorporate into the batter.
  7. Add the grated chocolate and drained sour cherries, folding them in with a spatula.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake in the lower third of the oven for about 55-60 minutes or until a toothpick comes out clean.
  10. Let it cool completely on a wire rack.
  11. Loosen the cake from the pan with a knife and lift it out using the baking paper strip.
  12. Remove the paper and place on a platter; dust with powdered sugar before serving.

Notes

This cake keeps well wrapped at room temperature for at least 3 days. Pairs wonderfully with vanilla ice cream or whipped cream.
