Ingredients

  • 1/4 cup (45 grams) dark chocolate (for crumble)
  • 1/3 cup (35 grams) gluten-free rolled oats
  • 1/4 cup (40 grams) nuts (cashews, walnuts) or seeds, or additional rolled oats
  • 12 tbsp maple syrup
  • 12 tbsp almond or cashew butter (or coconut oil)
  • Pinch of salt
  • 4 gluten-free digestive biscuits or graham cookies (for crumble)
  • 2 cups vegan whipped cream (for cherry cream)
  • 1/4 cup cherry marmalade or jam
  • 1/2 cup fresh cherries
  • Dark chocolate for decoration

Instructions

  1. Prepare the cookie crumble by blending dark chocolate, rolled oats, nuts, maple syrup, almond butter, and salt in a food processor until crumbly.
  2. If using cookies, crush them and mix with melted dark chocolate, maple syrup, and almond butter.
  3. In a bowl, mix vegan whipped cream with cherry marmalade until well combined.
  4. Chop fresh cherries, saving two for decoration.
  5. Assemble the jars by adding layers of chocolate crumble, chopped cherries, and cherry cream until full.
  6. Decorate with extra cherry cream, whole cherries, and dark chocolate shavings.
  7. Chill for 30 minutes if desired before serving.

Notes
