- 17 ounces dark chocolate Oreos (family-size package)
- 1/3 cup salted butter, melted
- 16 ounces cream cheese, softened
- 1 1/2 cups powdered sugar
- 1/2 cup Dutch process cocoa powder
- 3/4 cup sour cream
- 3 large eggs
- 10 ounces semi-sweet chocolate chips
- 1 1/3 cups heavy cream
- Chocolate shavings (optional, for garnish)
- Chocolate squares (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan.
- Crush the Oreos in a food processor until fully crumbled, then add the melted butter and pulse until wet sand forms. Press this mixture into the pan and bake for 8-10 minutes until set.
- In a mixer, beat the cream cheese, powdered sugar, and cocoa until smooth. Mix in the sour cream, then beat in the eggs until just combined.
- Wrap the pan with foil, pour the filling into the crust, and tap to remove air bubbles.
- Place the pan in a roasting pan filled with hot water and bake for 55-75 minutes. Cool the cheesecake in the oven for an hour after baking.
- Let it cool at room temperature for another hour, then refrigerate it overnight.
- For the ganache, heat the heavy cream, pour it over the chocolate chips, and whisk until smooth.
- Pour the ganache over the chilled cheesecake, garnish if desired, slice, and serve.
Notes
Make sure your cream cheese is soft to avoid lumps in the filling. Don’t overbeat the eggs; mix until just combined for a light and fluffy cheesecake.
