Description
A rich and creamy chocolate cheesecake that perfectly combines the smoothness of cheesecake with deep chocolate flavor. Perfect for any occasion.
Ingredients
Scale
- 1 1/2 cups chocolate wafer crumbs
- 2 tablespoons sugar
- 4 tablespoons melted butter
- 2 cups semisweet or bittersweet chocolate chips
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- 1/2 cup sour cream
- 1/4 cup cocoa powder
Instructions
- Preheat the oven to 350°F (175°C).
- Combine chocolate wafer crumbs, 2 tablespoons of sugar, and melted butter in a bowl to create the crust. Press this mixture into a 9-inch springform pan.
- Bake the crust for 10 minutes and then let it cool.
- Lower the oven temperature to 325°F (165°C).
- Melt the chocolate chips using a double boiler and set aside to cool slightly.
- In a mixing bowl, beat the softened cream cheese with 1 cup of granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition.
- Gradually mix in the melted chocolate, sour cream, flour, and vanilla extract. Blend until fully combined.
- Pour the cheesecake filling over the cooled crust and bake in the oven until the center is almost set, about 55-60 minutes.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Once cooled, let it sit at room temperature, then refrigerate for several hours or overnight.
Notes
For an intense chocolate flavor, consider adding chocolate liqueur to the filling. Be careful not to overbake; the center should jiggle slightly.
