Ingredients

  • 1 1/2 cups chocolate wafer crumbs
  • 2 tablespoons sugar
  • 4 tablespoons melted butter
  • 2 cups semisweet or bittersweet chocolate chips
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the chocolate wafer crumbs, sugar, and melted butter together. Press this mixture into the bottom and up the sides of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then allow it to cool.
  4. Lower the oven temperature to 325°F (165°C).
  5. Melt the chocolate chips in a double boiler and set aside to cool slightly.
  6. Beat the softened cream cheese and granulated sugar together until smooth. Add the eggs one at a time, mixing well after each addition.
  7. Gradually pour in the melted chocolate while continuing to beat on low speed.
  8. Stir in the sour cream, flour, and vanilla extract until well combined.
  9. Pour the filling over the cooled crust.
  10. Bake the cheesecake for 55-60 minutes or until the center is almost set.
  11. Turn off the oven and leave the cheesecake inside for 1 hour to cool, then allow it to cool completely at room temperature.
  12. Refrigerate the cheesecake for several hours or overnight before serving.

Notes

Serve with whipped cream, fresh berries, or a drizzle of chocolate sauce. Store covered in the refrigerator for 5-7 days or freeze for up to 3 months.
