- 1 1/2 cups chocolate wafer crumbs
- 2 tablespoons sugar
- 4 tablespoons melted butter
- 2 cups semisweet or bittersweet chocolate chips
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- 1/2 cup sour cream
- 1/4 cup cocoa powder
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the chocolate wafer crumbs, sugar, and melted butter together. Press this mixture into the bottom and up the sides of a 9-inch springform pan.
- Bake the crust for 10 minutes, then allow it to cool.
- Lower the oven temperature to 325°F (165°C).
- Melt the chocolate chips in a double boiler and set aside to cool slightly.
- Beat the softened cream cheese and granulated sugar together until smooth. Add the eggs one at a time, mixing well after each addition.
- Gradually pour in the melted chocolate while continuing to beat on low speed.
- Stir in the sour cream, flour, and vanilla extract until well combined.
- Pour the filling over the cooled crust.
- Bake the cheesecake for 55-60 minutes or until the center is almost set.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool, then allow it to cool completely at room temperature.
- Refrigerate the cheesecake for several hours or overnight before serving.
Notes
Serve with whipped cream, fresh berries, or a drizzle of chocolate sauce. Store covered in the refrigerator for 5-7 days or freeze for up to 3 months.
