  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup strong brewed coffee, hot
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup heavy cream
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, oil, eggs, and vanilla extract, beating until well combined.
  4. Gradually pour in hot coffee and mix until smooth.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes before transferring to a wire rack to cool completely.
  7. Reduce the oven temperature to 325°F (160°C). Beat cream cheese and sugar until smooth, then add egg, vanilla, and salt. Pour into a parchment-lined pan and bake for 25-30 minutes until set. Cool completely.
  8. In a large bowl, beat softened butter until creamy, then gradually add powdered sugar, cocoa powder, heavy cream, vanilla, and salt, beating until light and fluffy.
  9. Assemble the cake by placing one chocolate cake layer on a serving plate.
  10. Top with the cooled cheesecake layer and spread chocolate frosting over it, then place the second layer on top.
  11. Cover the entire cake with remaining chocolate frosting.
  12. For the ganache, heat heavy cream, pour over chocolate chips, let sit, then whisk until smooth and drizzle over the cake.
