- 1 1/2 cups chocolate graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- Chopped Twix bars (for garnish, optional)
Instructions
- Preheat your oven to 325°F (163°C).
- Combine crushed chocolate graham crackers and melted butter in a bowl until mixed. Press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and let cool completely.
- Beat cream cheese until smooth. Add sugar and vanilla extract, then eggs one at a time followed by sour cream. Mix until smooth.
- Pour cheesecake batter over cooled crust and bake for 50-60 minutes until the center is slightly jiggly. Cool in the oven for 1 hour.
- Drizzle caramel sauce over the cooled cheesecake.
- Heat heavy cream until it simmers, pour over chopped chocolate, and stir until smooth to make ganache. Pour ganache over caramel layer.
- Chill in the refrigerator for at least 4 hours or overnight.
- Garnish with chopped Twix bars before serving. Enjoy!

For best results, make sure the cream cheese is at room temperature and do not rush the cooling process.
