- 1 tablespoon sugar

- 32 ounces cream cheese, at room temperature
- 1 2/3 cups sugar
- 1/4 cup cornstarch

- 3/4 cup heavy whipping cream
- 40 Kraft caramels, unwrapped
- 1 can sweetened condensed milk
- 5 tablespoons butter
- 1 1/2 cups heavy cream
- 12 – 16 ounces semisweet chocolate, chopped (e.g., Ghirardelli semisweet chocolate bars)
- Fun-sized Twix bars (optional)
Instructions
- Prepare the Crust: Mix the graham cracker crumbs, sugar, and melted butter. Press it into the bottom of a 9-inch springform pan and bake at 350°F (175°C) for 8 minutes. Let cool.
- Make the Cheesecake Filling: Beat 1 package of cream cheese, 1/3 cup of sugar, and corn starch until creamy. Add remaining cream cheese, sugar, and vanilla. Mix in eggs one at a time, then beat in heavy whipping cream until blended. Pour onto cooled crust.
- Bake the Cheesecake: Wrap the sides of the springform pan in aluminum foil, place in a larger pan, and add hot water for a water bath. Bake for about 1 1/4 hours or until golden and slightly jiggly in the center. Cool and chill until cold.
- Make the Caramel Sauce: In a heatproof bowl, combine unwrapped caramels, sweetened condensed milk, and butter. Melt in the microwave until smooth.
- Make the Ganache: Heat heavy cream until just boiling. Pour over chopped chocolate, let sit for 2 minutes, then stir until smooth.
- Assemble the Cheesecake: Pour half of the caramel onto the cheesecake, chill until firm. Pour chocolate ganache over the cheesecake and chill for several hours or overnight. Garnish with fun-sized Twix bars if desired.
- Serve: Remove sides of the springform pan, slice, and serve with more caramel sauce drizzled on top.

Make sure the cream cheese is at room temperature for easy mixing. Don’t skip the water bath; it helps prevent cracks in the cheesecake. Let it chill completely for the best texture.
