A delightful cheesecake that combines creamy cheese, sweet chocolate, and gooey caramel, inspired by Twix bars.

- 1 1/2 cups chocolate graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- Chopped Twix bars (optional)
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine crushed chocolate graham crackers and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove and let cool.
- In a large bowl, beat softened cream cheese until smooth. Mix in sugar and vanilla. Add eggs one at a time, mixing on low until just incorporated. Then, fold in sour cream until the batter is smooth.
- Pour the cheesecake batter over the cooled crust. Bake for 50-60 minutes until the center is set but still slightly jiggly. Let it cool in the oven with the door cracked for 1 hour.
- Drizzle caramel sauce over the cooled cheesecake and spread it evenly.
- Heat heavy cream in a saucepan until simmering. Pour the hot cream over the chopped chocolate, let it sit for 2-3 minutes, then stir until smooth. Pour the chocolate ganache over the caramel layer.
- Refrigerate the cheesecake for at least 4 hours or overnight to set.
- Garnish with chopped Twix bars before serving and enjoy!
Notes
Store leftover cheesecake in the refrigerator for up to 5 days or freeze for up to 2 months.
