- 1 1/2 cups chocolate graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup caramel sauce
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- Chopped Twix bars (optional for garnish)
Instructions
- Preheat your oven to 325°F (163°C). In a mixing bowl, combine the crushed chocolate graham crackers and melted butter. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool completely.
- In a large bowl, beat the softened cream cheese until smooth. Mix in the sugar and vanilla extract. Add the eggs, one at a time, mixing slowly after each addition. Fold in the sour cream.
- Pour the cheesecake batter over the cooled crust and bake for 50-60 minutes, or until the center is slightly jiggly. Allow it to cool in the oven for 1 hour.
- Drizzle the caramel sauce over the cooled cheesecake, spreading it evenly across the top.
- In a saucepan, heat the heavy cream until it simmers. Pour it over the chopped chocolate and stir until smooth. Then, pour the ganache over the caramel layer.
- Refrigerate for at least 4 hours or overnight to let it set properly.
- Before serving, garnish with chopped Twix bars and enjoy!
Notes
Make sure the cream cheese is at room temperature to create a smooth filling. Don’t overmix after adding the eggs to prevent cracking. Optional: Add chopped nuts for crunch or use different candy bars for variation.
