Chocolate Caramel Cream Roll

Description

A delightful dessert combining rich chocolate and sweet salted caramel in a beautiful roll, perfect for any occasion.


Ingredients

  • 3 large eggs, separated
  • 80g granulated sugar (2x40g)
  • 1 Tablespoon (15ml) strong brewed coffee or 1 teaspoon espresso powder
  • 45g unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 47g all-purpose flour
  • 3 Tablespoons natural unsweetened cocoa powder (plus 2 Tablespoons for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 250 ml whipping cream
  • 1/4 cup salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 12×10-inch (20×30 cm) baking pan with parchment paper and lightly oil it.
  2. Beat egg whites with 40g of sugar until soft peaks form.
  3. Beat egg yolks with remaining 40g of sugar and vanilla extract until pale and creamy.
  4. Sift flour, 3 tablespoons cocoa powder, salt, and baking powder. Add dry ingredients, butter, and coffee to egg yolk mixture and mix.
  5. Gently fold in beaten egg whites in two additions until combined.
  6. Spread batter into prepared pan and bake for 10 minutes. Let cool for 5 minutes.
  7. Beat whipping cream until thick, then add salted caramel sauce and beat until soft peaks form.
  8. Dust parchment paper or kitchen towel with remaining cocoa powder and turn warm cake onto it. Peeling off the original parchment.
  9. Roll the cake in the new parchment or towel and cool completely on a wire rack.
  10. Unroll the cake, spread salted caramel cream, and roll up again without parchment. Place seam-side down on a serving plate.
  11. Optionally decorate with cream or extra cocoa powder before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for a few days. The cake can become soggy over time.
