Ingredients

- 1/2 cup + 2 tbsp unsalted butter, room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
- 12 caramels (store-bought soft caramels)
Instructions
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and continue mixing until smooth and well combined.
- Add the flour, cocoa powder, baking soda, and salt to the wet mixture. Mix until just combined.
- Fold in the chocolate chips into the cookie dough.
- Chill the dough in the refrigerator for 2-3 hours.
- After chilling, scoop out small portions of the dough and roll them into balls. Flatten each dough ball slightly and place a caramel in the center. Fold the dough around the caramel, ensuring it’s fully enclosed.
- Place the cookie dough balls on a baking tray lined with parchment paper. Bake at 350°F (177°C) for 10-12 minutes, or until the edges are firm.
- Let the cookies cool for a few minutes on the tray before transferring them to a wire rack to cool completely.
Notes
Serve warm for an oozy caramel experience. Store in an airtight container for up to a week.
