Description

Delightful cookies that combine rich chocolate and gooey caramel, perfect for any occasion.


Ingredients

  • 1/2 cup + 2 tbsp unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • 12 caramels (store-bought soft caramels)

Instructions

  1. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and continue mixing until smooth and well combined.
  3. Add the flour, cocoa powder, baking soda, and salt to the wet mixture. Mix until just combined.
  4. Fold in the chocolate chips into the cookie dough.
  5. Chill the dough in the refrigerator for 2-3 hours.
  6. After chilling, scoop out small portions of the dough and roll them into balls. Flatten each dough ball slightly and place a caramel in the center. Fold the dough around the caramel, ensuring it’s fully enclosed.
  7. Place the cookie dough balls on a baking tray lined with parchment paper. Bake at 350°F (177°C) for 10-12 minutes, or until the edges are firm.
  8. Let the cookies cool for a few minutes on the tray before transferring them to a wire rack to cool completely.

Notes

Serve warm for an oozy caramel experience. Store in an airtight container for up to a week.
