Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the butter mixture, alternating with the milk. Mix until just combined.
  4. Divide the batter evenly between the prepared pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  5. While the cakes are cooling, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form. Gently fold in the melted chocolate until the mousse is smooth. Chill the mousse in the refrigerator for 30 minutes.
  6. Once the cakes are completely cool, place one layer on a serving platter and spread a generous amount of mousse on top. Add the second layer of cake and frost the top and sides with the remaining mousse.
  7. Garnish with chocolate shavings, fresh berries, or your favorite toppings. Slice and enjoy!

Notes

Make sure your butter is softened for better incorporation. Feel free to add flavors to the mousse, such as espresso or orange zest.
