Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream butter and granulated sugar until light and fluffy, then add eggs one at a time, beating well after each addition.
  3. In another bowl, mix together flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry mixture to the butter mixture, alternating with milk. Mix until just combined.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  6. For the mousse, whip heavy cream until soft peaks form. Add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
  7. Fold in the melted chocolate until well combined. Chill mousse in the refrigerator for 30 minutes.
  8. To assemble the cake, place one layer on a serving platter, spread mousse on top, then add the second layer. Frost the top and sides with the remaining mousse.
  9. Garnish with chocolate shavings or berries. Slice and serve!

Notes

Make sure butter is softened for easier mixing. Don’t overmix the batter.
