- 1 cup all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 cup butter, softened
- 1/2 cup milk
- 3 large eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 4 oz semi-sweet chocolate, melted
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream butter and granulated sugar until light and fluffy, then add eggs one at a time, beating well after each addition.
- In another bowl, mix together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture to the butter mixture, alternating with milk. Mix until just combined.
- Divide the batter between the prepared pans and bake for 30-35 minutes. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the mousse, whip heavy cream until soft peaks form. Add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
- Fold in the melted chocolate until well combined. Chill mousse in the refrigerator for 30 minutes.
- To assemble the cake, place one layer on a serving platter, spread mousse on top, then add the second layer. Frost the top and sides with the remaining mousse.
- Garnish with chocolate shavings or berries. Slice and serve!
Notes
Make sure butter is softened for easier mixing. Don’t overmix the batter.
