Ingredients

  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. In another bowl, mix the flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the butter mixture, alternating with milk. Mix until just combined.
  4. Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  5. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  6. Gently fold the melted chocolate into the whipped cream until fully combined. Chill the mousse in the refrigerator for about 30 minutes.
  7. Place one cooled cake layer on a serving platter. Spread a thick layer of mousse on top, add the second cake layer, and frost the top and sides with the remaining mousse.
  8. Garnish with chocolate shavings or fresh berries if desired. Slice, serve, and enjoy!

Notes

For best results, ensure butter is at room temperature and use high-quality chocolate for the mousse.
