- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 3/4 teaspoon vanilla extract
- 1/2 cup boiling water
- 1 cup milk chocolate, finely chopped
- 1 1/2 cups heavy cream
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a big bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- Mix in the egg, buttermilk, vegetable oil, and vanilla until smooth.
- Slowly stir in the boiling water (the batter will be thin) and pour into the prepared pan. Bake for 30-35 minutes until a toothpick comes out clean. Let it cool completely.
- Bloom the gelatin in cold water for 5 minutes.
- Melt the milk chocolate and let it cool a bit.
- Heat 1/2 cup of heavy cream and stir in the bloomed gelatin.
- Pour the warm cream over the melted chocolate, stirring until everything is smooth.
- Whip the rest of the heavy cream until soft peaks form and gently fold it into the chocolate mixture.
- Once your cake is cooled, spread the mousse on top and refrigerate for 2-3 hours until it sets. Garnish with chocolate shavings or fresh berries.
Notes
Make sure your ingredients are at room temperature for better mixing. For a richer flavor, you can use dark chocolate instead of milk chocolate in the mousse.
