Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1 cup milk chocolate, finely chopped
  • 1 1/2 cups heavy cream
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a big bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Mix in the egg, buttermilk, vegetable oil, and vanilla until smooth.
  4. Slowly stir in the boiling water (the batter will be thin) and pour into the prepared pan. Bake for 30-35 minutes until a toothpick comes out clean. Let it cool completely.
  5. Bloom the gelatin in cold water for 5 minutes.
  6. Melt the milk chocolate and let it cool a bit.
  7. Heat 1/2 cup of heavy cream and stir in the bloomed gelatin.
  8. Pour the warm cream over the melted chocolate, stirring until everything is smooth.
  9. Whip the rest of the heavy cream until soft peaks form and gently fold it into the chocolate mixture.
  10. Once your cake is cooled, spread the mousse on top and refrigerate for 2-3 hours until it sets. Garnish with chocolate shavings or fresh berries.

Notes

Make sure your ingredients are at room temperature for better mixing. For a richer flavor, you can use dark chocolate instead of milk chocolate in the mousse.
