Ingredients

  • 1 tsp baking powder

  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • Strawberry filling (for layering)
  • Whipped cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until smooth.
  4. Stir in the boiling water until fully combined (the batter will be thin).
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then remove and cool completely on a wire rack.
  7. Once cooled, slice each cake in half horizontally to create four layers.
  8. Layer the cakes with strawberry filling and top with whipped cream. Serve and enjoy!

Notes

Use quality cocoa powder for a richer flavor. Cake flour can be used for a lighter texture. Let the cakes cool completely before slicing.
