Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 1/2 cups heavy cream (cold)
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp butter
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth. Then carefully stir in the hot coffee (the batter will be thin).
  4. Divide the batter between the two pans and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool completely.
  5. In a microwave or double boiler, melt the chocolate chips, butter, and vanilla together. Let it cool slightly.
  6. In a chilled bowl, whip the heavy cream with powdered sugar until stiff peaks form. Gently fold in the melted chocolate until you have a smooth mousse.
  7. Place one cake layer on a serving plate. Spread a thick layer of chocolate mousse over the top. Add the second cake layer and spread more mousse over the top and sides. Chill for 1-2 hours to set.

Notes

Best served chilled. Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months.
