Ingredients

  • 1/4 cup unsweetened cocoa powder

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract

  • 1/4 cup powdered sugar (for rolling)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
  2. Sift together the flour, cocoa powder, baking powder, and salt in a medium bowl.
  3. In a large bowl, beat the eggs and granulated sugar on high speed for 5 minutes until thick and pale. Add the vanilla extract and vegetable oil; mix gently.
  4. Gradually fold the dry ingredients into the egg mixture until just combined. Spread the batter evenly into the prepared pan.
  5. Bake for 10–12 minutes or until the top springs back when lightly touched.
  6. While the cake is hot, sprinkle powdered sugar over a clean kitchen towel. Carefully turn the cake out onto the towel, peel off the parchment paper, and roll the cake (with the towel) starting from the short end. Let cool completely.
  7. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Gently unroll the cooled cake, spread the whipped cream evenly over the surface, and roll it back up (without the towel). Place seam-side down on a serving platter.
  9. Heat the heavy cream in a small saucepan until just simmering. Pour hot cream over chocolate chips in a bowl, let sit for 2 minutes, then whisk until smooth and glossy.
  10. Pour the ganache over the cake roll and spread it evenly over the top and sides.
  11. Chill the cake roll in the refrigerator for at least 1 hour to set. Dust with powdered sugar or garnish with fresh berries before serving.

Notes

Ensure eggs are at room temperature for better batter rise. Avoid freezing the cake roll, as the filling may change texture.
