Description

A delightful rolled dessert combining rich chocolate flavor with a creamy filling and glossy ganache.


Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs, separated
  • 3/4 cup granulated sugar (divided: 1/2 cup for yolks, 1/4 cup for whites)
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1 cup heavy cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 1/2 cup semi-sweet chocolate, melted
  • 2 tbsp heavy cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Sift together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Beat egg whites until soft peaks form, then gradually add 1/4 cup sugar until stiff peaks form.
  4. In another bowl, beat egg yolks with remaining 1/2 cup sugar until thick and pale. Mix in vanilla extract and milk.
  5. Fold the dry ingredients into the yolk mixture until combined, then gently fold in the whipped egg whites.
  6. Pour the batter into the prepared pan and bake for 10-12 minutes until it springs back when touched.
  7. Dust a towel with powdered sugar, turn the warm cake onto it, peel off the parchment, and roll the cake tightly using the towel.
  8. Let the rolled cake cool completely.
  9. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form for the filling.
  10. Unroll the cooled cake, spread the filling evenly, and roll it tightly again without the towel.
  11. Mix melted chocolate with heavy cream for the topping and drizzle over the cake.
  12. Refrigerate for at least 1 hour before slicing and serving.

Notes

Store any leftover Chocolate Cake Roll in the refrigerator for up to 3 days.
