Ingredients

  • 1/4 cup (55g) vegetable oil
  • 1/2 teaspoon vanilla extract
  • 2 large eggs (room temperature)
  • 1 cup (120g) all-purpose flour
  • 2/3 cup (135g) brown or white sugar
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (120g) warm water
  • 1 teaspoon instant coffee (optional)
  • 8 Oreo cookies, crushed
  • 1 cup (226g) cream cheese (room temperature)
  • 2/3 cup (90g) powdered sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup (180g) cold heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. In a large bowl, mix the milk, oil, vanilla extract, and eggs until combined.
  3. In another bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mix, stirring until well blended.
  5. Slowly stir in the warm water, adding coffee if using, to make the batter thin.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let the cakes cool.
  7. For the filling, crush the Oreos and set aside. In a bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  8. In another bowl, whip the heavy cream to stiff peaks and gently fold it into the cream cheese mixture along with the crushed Oreos.
  9. Assemble the cake by layering the Oreo filling between the cooled cake layers and on top of the final layer.
  10. Refrigerate for at least 1 hour before serving. Garnish with crushed Oreos or chocolate ganache if desired.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Adjust sweetness of the filling by modifying powdered sugar. A splash of coffee can add extra flavor to the batter.
