  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for filling)
  • 1 tbsp lemon juice
  • 1/4 cup cornstarch
  • 1 cup water (for filling)
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream
  • 2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat together the sugar, eggs, and vanilla until fluffy. Mix in the milk and vegetable oil until well combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture.
  4. Carefully stir in the boiling water until the batter is smooth and thin.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely in the pans.
  6. In a saucepan over medium heat, combine the sliced strawberries, sugar, lemon juice, cornstarch, and water. Cook until the mixture thickens, about 5-10 minutes. Let it cool.
  7. Once the cakes are completely cooled, level them if necessary. Spread the strawberry filling over the top of one cake layer, then gently place the second layer on top.
  8. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing well. Then, add the heavy cream and vanilla extract, beating until smooth and fluffy.
  9. Frost the top and sides of the cake with the chocolate frosting. Garnish with extra strawberries if desired.

Notes

Use fresh strawberries for the best flavor. Allow the cakes to cool completely before frosting to avoid melting.
