  • 1 1/2 cups sugar
  • 1 1/2 tsp baking powder

  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for filling)
  • 1 tbsp lemon juice
  • 1/4 cup cornstarch
  • 1 cup water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream
  • 2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat together the sugar, eggs, and vanilla until fluffy. Add the milk and vegetable oil, mixing well.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  4. Carefully stir in the boiling water until the batter is smooth and thin.
  5. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool completely in the pans.
  6. In a saucepan over medium heat, combine the sliced strawberries, sugar, lemon juice, cornstarch, and water. Cook until the mixture thickens, about 5-10 minutes. Let it cool before using.
  7. Once the cakes are completely cooled, level them if necessary. Spread the strawberry filling over the top of the first cake layer, then place the second layer on top.
  8. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until smooth. Then, mix in the heavy cream and vanilla extract until the frosting is fluffy.
  9. Frost the top and sides of the entire cake. If desired, garnish with extra strawberries on top.

Notes

Use fresh, ripe strawberries for the best flavor. For a richer chocolate taste, opt for high-quality cocoa powder.
