  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for filling)
  • 1 tbsp lemon juice
  • 1/4 cup cornstarch
  • 1 cup water (for filling)
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream
  • 2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat together the sugar, eggs, and vanilla until fluffy. Add the milk and vegetable oil, mixing until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix these dry ingredients into the wet mixture.
  4. Stir in the boiling water until the batter is smooth and thin.
  5. Divide the batter evenly between the two pans and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool completely in the pans.
  6. In a saucepan over medium heat, combine the strawberries, sugar, lemon juice, cornstarch, and water. Cook until it thickens, about 5-10 minutes. Let it cool.
  7. Once the cakes are cool, level them off if needed. Spread the strawberry filling over the first layer of cake, then place the second layer on top.
  8. Beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder. Mix in the heavy cream and vanilla, beating until smooth.
  9. Frost the top and sides of the cake, adding extra strawberries on top if you like.
