  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/4 cup cornstarch
  • 1 cup water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat sugar, eggs, and vanilla until fluffy. Add milk and vegetable oil, mixing until combined.
  3. In a separate bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture.
  4. Stir in boiling water until the batter is smooth and thin.
  5. Divide the batter evenly between the pans and bake for 30-35 minutes, until a toothpick comes out clean. Cool completely in the pans.
  6. For the strawberry filling, combine strawberries, sugar, lemon juice, cornstarch, and water in a saucepan over medium heat. Cook until thickened, about 5-10 minutes. Let cool.
  7. Once the cakes are cooled, level them if needed. Spread the strawberry filling over the first cake layer, then place the second layer on top.
  8. For frosting, beat softened butter until creamy. Gradually add powdered sugar and cocoa powder. Mix in heavy cream and vanilla, beating until smooth.
  9. Frost the top and sides of the cake. Garnish with extra strawberries if desired.

Notes

Ensure ingredients are at room temperature for best results. Use ripe strawberries for a flavorful filling.
