Ingredients

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate, chopped (for ganache)
  • 1 tbsp butter (for ganache)
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/2 cup cocoa powder (for frosting)
  • 1/4 cup heavy cream (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla extract, then stir until just combined.
  4. Carefully pour in hot coffee and mix until smooth; the batter will be thin.
  5. Divide batter equally into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let the cakes cool completely.
  6. To prepare ganache, heat heavy cream until hot but not boiling, then pour over chopped chocolate and butter, stirring until smooth. Allow it to cool slightly until thickened.
  7. For the frosting, beat softened butter until creamy, then mix in powdered sugar and cocoa powder. Add heavy cream and vanilla, beating until fluffy and smooth.
  8. Assemble the cake by placing one layer on a plate, spreading ganache on top, then adding the second layer. Frost the entire cake with the chocolate frosting and drizzle leftover ganache over the top.
  9. Slice and enjoy the rich chocolate cake!

Notes

For added crunch, consider adding chopped nuts to the batter. Ensure cakes cool completely before frosting for best results.
