- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar

- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for filling)
- 1 egg (for filling)
- 1 tsp vanilla extract (for filling)
- 1/2 cup unsalted butter (optional frosting)
- 1 3/4 cups powdered sugar (optional frosting)
- 1/2 cup unsweetened cocoa powder (optional frosting)
- 1/4 cup milk (optional frosting)
- 1 tsp vanilla extract (optional frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla to the dry ingredients. Mix until smooth.
- Slowly stir in the hot water until well combined.
- In a medium bowl, beat the cream cheese, sugar, 1 egg, and 1 tsp vanilla until smooth.
- Pour half of the chocolate batter into the prepared cake pans.
- Spoon the cream cheese filling over the chocolate batter evenly.
- Pour the remaining chocolate batter on top of the filling.
- Bake for 30–35 minutes, or until a toothpick comes out mostly clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack.
- For optional frosting, beat the butter, powdered sugar, cocoa powder, milk, and vanilla together until fluffy. Frost the cake once it has cooled completely.
Notes
Store leftover cake in an airtight container in the refrigerator for 3 to 5 days. Use hot water in the batter to keep the cake moist, and let the cakes cool completely before frosting.
