- 3 cups sugar
- 16 ounces melted butter
- 1.5 cups cocoa powder, sifted

- 1.5 cups unsweetened or sweetened coconut flakes

- 5 tablespoons unsalted butter, room temperature
- 3 sticks unsalted butter, softened
- 8 ounces mascarpone cheese, chilled
- 2.5 cups powdered sugar
- 1 vanilla bean, seeds scraped
- 8 ounces semisweet chocolate, chopped
- 2 tablespoons light corn syrup
- 1 cup heavy cream (for ganache)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, beat the eggs and sugar until thick and creamy. Add the melted butter and mix well.
- Stir in cocoa powder, vanilla extract, flour, kosher salt, and baking powder until combined.
- Divide the brownie batter between the pans and bake for 25-30 minutes until a toothpick comes out with a few crumbs. Let cool.
- Make the coconut filling by cooking walnuts, coconut flakes, heavy cream, sugar, and egg yolks until thickened (around 10 minutes). Stir in the room temperature butter and cool.
- For the vanilla buttercream, beat softened butter and mascarpone cheese until creamy. Gradually add powdered sugar and vanilla seeds until smooth.
- Assemble the cake with one brownie layer, half the coconut filling, the second layer, and the remaining filling on top.
- For the ganache, heat heavy cream until simmering. Pour over chocolate and corn syrup, stir until smooth, then cool slightly.
- Drizzle ganache over the cake, let it drip down the sides, and chill for 30 minutes.
Notes
Make sure your eggs are at room temperature for better mixing. Sift cocoa powder and flour to avoid lumps. Toast coconut flakes for a stronger flavor if desired.
