Ingredients

  • 6 eggs (size M)
  • 230 g sugar
  • 1 pinch of salt
  • 150 g wheat flour (type 405)
  • 2 tbsp baking cocoa
  • 70 g ground hazelnuts
  • 100 g chocolate eggs
  • 500 g mascarpone
  • 250 g cream
  • 2 tbsp sugar
  • 1 tbsp vanilla extract
  • 250 g cream
  • 350 g chocolate eggs

Instructions

  1. Preheat oven to 180°C (or 160°C for fan ovens) and line a 20 cm springform pan with baking paper.
  2. In a mixing bowl, whip the eggs, sugar, and salt for 4 minutes until frothy.
  3. In another bowl, combine flour, baking cocoa, and ground hazelnuts, then fold this mixture into the egg mixture.
  4. Pour the batter into the prepared pan and bake for 35 minutes, then cool on a rack.
  5. Chop the chocolate eggs, then mix mascarpone and cream, add sugar and vanilla extract, and beat until stiff.
  6. Once cooled, cut the cake into three layers and assemble with cream in between.
  7. Chill in the fridge for at least 2 hours before serving.

Ensure all ingredients are at room temperature for better mixing. Chill time is crucial for setting the layers.
