- 6 eggs (size M)
- 230 g sugar
- 1 pinch of salt
- 150 g wheat flour (type 405)
- 2 tbsp baking cocoa
- 70 g ground hazelnuts
- 100 g chocolate eggs
- 500 g mascarpone
- 250 g cream
- 2 tbsp sugar
- 1 tbsp vanilla extract
- 250 g cream
- 350 g chocolate eggs
Instructions
- Preheat oven to 180°C (or 160°C for fan ovens) and line a 20 cm springform pan with baking paper.
- In a mixing bowl, whip the eggs, sugar, and salt for 4 minutes until frothy.
- In another bowl, combine flour, baking cocoa, and ground hazelnuts, then fold this mixture into the egg mixture.
- Pour the batter into the prepared pan and bake for 35 minutes, then cool on a rack.
- Chop the chocolate eggs, then mix mascarpone and cream, add sugar and vanilla extract, and beat until stiff.
- Once cooled, cut the cake into three layers and assemble with cream in between.
- Chill in the fridge for at least 2 hours before serving.

Ensure all ingredients are at room temperature for better mixing. Chill time is crucial for setting the layers.
