Description

A delightful dessert that combines rich chocolate with fresh berries, perfect for celebrations or a sweet treat.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 1 1/2 cups (360ml) heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 cups (300g) mixed fresh berries (strawberries, raspberries, blueberries)
  • 1/2 cup (100g) chocolate shavings or curls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch cake pans.
  2. In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, granulated sugar, brown sugar, milk, oil, and vanilla extract until smooth.
  4. Gradually combine the wet and dry ingredients to make a batter, then mix in the boiling water.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans before transferring them to a wire rack.
  7. To make the whipped cream, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. To assemble the cake, layer one cake with whipped cream and mixed berries, then place the second cake on top.
  9. Finish by topping the second layer with more whipped cream, berries, and chocolate shavings if desired.
  10. Chill the cake in the refrigerator for at least 1 hour before serving.

Notes

Make sure your eggs and milk are at room temperature for a smoother batter. Don’t skip the chilling step to help the flavors meld together.
