- 2 cups (250g) all-purpose flour
- 3/4 cup (75g) unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (200g) brown sugar
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
- 1 1/2 cups (360ml) heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 2 cups (300g) mixed fresh berries (strawberries, raspberries, blueberries)
- 1/2 cup (100g) chocolate shavings or curls (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch cake pans.
- In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, granulated sugar, brown sugar, milk, oil, and vanilla extract until smooth.
- Gradually combine the wet and dry ingredients to make a batter, then mix in the boiling water.
- Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans before transferring them to a wire rack.
- To make the whipped cream, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- To assemble the cake, layer one cake with whipped cream and mixed berries, then place the second cake on top.
- Finish by topping the second layer with more whipped cream, berries, and chocolate shavings if desired.
- Chill the cake in the refrigerator for at least 1 hour before serving.
Notes
Make sure your eggs and milk are at room temperature for a smoother batter. Don’t skip the chilling step to help the flavors meld together.
