A delightful triple layer mousse made from dark, milk, and white chocolate on a crunchy chocolate cookie crust topped with glossy ganache. Perfect for chocolate lovers!

- 2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup dark chocolate, melted
- 1 cup milk chocolate, melted
- 1 cup white chocolate, melted
- 3 cups heavy cream, divided
- 1/4 cup powdered sugar (for each mousse layer)
- 1/2 cup heavy cream for ganache
- 1/2 cup dark chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
- In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the pan to form a solid crust.
- Bake for 8-10 minutes, and then let it cool completely on a wire rack.
- In separate bowls, whip 1 cup of heavy cream for each mousse layer until soft peaks form.
- Melt the dark, milk, and white chocolate in another set of bowls. Stir in 1/4 cup powdered sugar into each bowl.
- Gently fold the corresponding whipped cream into each chocolate mixture until light and fluffy.
- Once the crust has cooled, spoon the dark chocolate mousse onto the crust and smooth it out.
- Add the milk chocolate mousse as the next layer, smoothing it evenly, and finish with the white chocolate mousse on top.
- Refrigerate the assembled cake for at least 3 hours or until firm.
- Heat 1/2 cup heavy cream in a saucepan until it just begins to simmer. Pour it over the chopped dark chocolate, let it sit for 2-3 minutes, and then stir until smooth.
- Drizzle the ganache over the chilled cake for an extra decadent finish.
Notes
For best results, refrigerate the assembled cake for the full recommended time to allow layers to set properly. You can garnish with chocolate shavings or whipped cream.
