- 4 large eggs (room temperature)
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder (unsweetened)
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 15×10 inch jelly roll pan.
- In a large bowl, beat the eggs and sugar until thick and pale. Add the vanilla extract.
- Sift the flour, cocoa powder, baking powder, and salt together, then fold into the egg mixture gently until combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for about 12-15 minutes or until the cake springs back when touched.
- Remove from the oven and quickly invert onto a clean kitchen towel dusted with powdered sugar.
- Carefully remove the parchment paper and roll the cake up with the towel from the short end.
- Let it cool completely.
- Unroll the cake and fill with your desired filling (such as whipped cream or chocolate ganache).
- Roll back up without the towel and slice to serve.
Notes
Serve chilled or at room temperature, dusted with powdered sugar or drizzled with chocolate sauce.
