A decadent dessert that combines rich chocolate cake, creamy ice cream, and a shimmering ganache. Perfect for any celebration!

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 cups granulated sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 pint chocolate ice cream (softened slightly)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup mini chocolate chips
- 1 cup crushed Oreos
- 1/2 cup chopped chocolate candy bars (like Snickers or Twix)
- Chocolate sauce (for drizzling)
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- Sift together flour, cocoa powder, baking powder, baking soda, and salt. Add sugar, eggs, milk, oil, and vanilla extract; mix until smooth.
- Stir in boiling water to create a moist batter. Divide evenly between the pans and bake for 30–35 minutes until a toothpick comes out clean. Let cool completely.
- Line a 9-inch pan with plastic wrap and spread softened chocolate ice cream evenly into it. Freeze until solid (about 2–3 hours).
- In a saucepan, heat heavy cream over medium heat until it simmers. Pour over chocolate chips, let sit for 2–3 minutes, then whisk until smooth. Set aside to cool slightly.
- Assemble the cake: Place one cake layer on a serving plate, spread ganache on top. Remove the ice cream layer using the plastic wrap and place it over the cake. Top with the second cake layer and pour remaining ganache over the entire cake.
- Immediately sprinkle mini chocolate chips, crushed Oreos, and chopped candy bars on top. Drizzle with chocolate sauce.
- Freeze the cake for at least 1 hour to set. Slice and serve with extra chocolate sauce or whipped cream.
Notes
Store leftovers in the freezer. Wrap tightly in plastic wrap or place in an airtight container to keep fresh for up to two weeks.
